Traditional Dish Recipe: Kucha

Kucha is a famous Gambian dish cooked with the hibiscus leaf and served with rice. Kucha is a mix of many flavours, and it has a distinctive sourness. It is a good remedy food for sickness because it is appetizing.

INGREDIENTS

  • fish of choice
  • Hibiscus leaf
  • Okra
  • Salted fish
  • Locust bean
  • Tomatoes
  • Onion
  • Hot pepper
  • Maggi (or any other type of mixed African spices)
  • Tomato paste
  • Salt
  • Lime or vinegar

 

PREPARATION

Clean the fish thoroughly, cut the fish a few times to allow it to cook and marinate well, season it with salt and lime (or vinegar) and let it marinate for some time.

Pound locust beans, onions, tomatoes and hot pepper together.

Put the pounded mixture in the cooking pot together with salted fish, tomato paste, Maggi and salt, then add water and put on fire to cook. When the soup is almost ready, add the fish and boil for a short time, not allowing it to overcook and fall apart.

Wash the hibiscus leaves and okra and boil them.

When hibiscus leaves are cooked, take them out of the pot and mash them while still allowing okra to cook for some time. Then pound the okra, add it to mashed leaves, add a pinch of salt and mix it.

When the soup is ready, add the hibiscus mashed with the okra to it and mix it well.

Serve the plate with plain rice, green sauce and fish.
