RECIPE: Bissap (Side Sauce)

My Magazine 2024/01
1 min
The Roselle Hibiscus goes by many names: in parts of West Africa, including The Gambia, it is commonly known as Bissap - one of Africa's hidden gems and a superfood made in heaven. Hibiscus contains antioxidants and has been found to reduce blood pressure, cholesterol, blood sugar levels, and cancer risk amongst other health benefits.

Bissap is a versatile crop with many uses and is a popular vegetable in many parts of Africa. West African women add bissap leaves to stews, soups, or stir-fries and also brew the flowers into a sugary juice or tea. Even though it can be used in main dishes or as an accompaniment to chicken, meat or fish dishes, it is also perfect for vegan and vegetarian dishes. In short, the possibilities are endless.

Today, we bring you the recipe for a side dish called Bissap or Rangha, which is very popular, not just amongst the locals!

Ingredients -

  • Bissap Leaves
  • Okra
  • Hot peppers
  • Seasoning Cube

Instructions

  1. Separate the leaves from the stalks and wash thoroughly with okra and hot peppers.
  2.  Boil the okra and hot peppers, and then add the bissap leaves.
  3.  Now blend them well in a blender or traditional mortar and pestle.
  4.  Add the seasoning cube, and your Bissap is ready!

This dish may not look appealing but trust us, it's delicious and to die for. So don't hesitate to give it a try.
