Drink of the month: Tamarind Juice

Tamarind is a famous traditional beverage made in The Gambia which plays an important role as traditional medicine in beverage form. It treats diarrhoea, fever, malaria, etc. and is rich in vitamins and minerals.

INGREDIENTS

  • Tamarind Fruit
  • Sugar
  • Lime juice
  • Cloves

INSTRUCTIONS

First, wash the tamarind fruit, add hot water to soak it, and wait for some minutes. While waiting for it to soak, you can start boiling cloves. Put soaked tamarind and boiled cloves into the mortar and pound it to produce the juice from it. The next step is sieving the liquid to remove the pounded fruits. Add sugar to the juice, mix it well until it dissolves, and add lime juice. Cool down the juice, and it is ready to be enjoyed!
