Traditional Dish Recipe: Domoda

Domoda, a beloved Mandinka dish, is a flavorful groundnut stew enriched with spices, meat options such as chicken or fish, and an array of vegetables. This traditional delicacy has gained widespread popularity in both The Gambia and Senegal. Notably, when prepared with a milder spice profile, it becomes the preferred choice for many visitors exploring the culinary delights of The Gambia.

Ingredients

  • Meat (Chicken or fish can also be used instead)
  • 2 Onions
  • 4 hot peppers (or as per preference)
  • 2 carrots
  • 4 potatoes
  • 4 fresh tomatoes
  • 3 bitter tomatoes
  • Spring onions
  • Garlic
  • Lemon juice
  • Tomato paste
  • Peanut butter
  • Seasonings (Salt, Black Pepper and Maggi cube)
  • Oil

Directions

  1. Wash the meat and cut it into pieces.
  2.  Wash all the vegetables and chop them into the desired size
  3.  Heat oil in a large pot. Brown the sliced onions and then add meat.
  4. When the meat is brown, add all the remaining ingredients (including any other vegetables you are using) except peanut butter.
  5.  Add enough water to cover the meat and vegetables and bring to a boil.
  6.  Reduce heat and simmer until everything is cooked or tender(about twenty minutes).
  7.  Stir in the peanut butter and adjust the water if necessary. Continue to simmer on low heat for 15-20 minutes, stirring often.

Domoda is ready when the sauce is thick. Some of the oil from the peanut butter will separate and float to the top. You can remove this oil if you prefer.

To make Fish Domoda, cook the fish with blended onion, pepper, fresh tomato and lemon. After 10 minutes, remove the fish from the pan and follow the recipe from Step 4 above. You can add the fish on the side when serving the meal.

Domoda is best served with rice or couscous.

Note: there are many different ways of preparing Domoda, and it can vary in the selection of meat, vegetables and the cooking method.
