Bakary Manneh’s journey to becoming the master chef at Bakadaji began in the most humble of kitchens. As a young boy, he was entrusted with cooking duties while his mother worked in the rice fields. Without a sister to share these responsibilities, Bakary found himself developing a deep passion for the culinary arts. Despite this early interest, his path seemed to diverge when he graduated and decided to pursue nursing. However, fate had different plans for Bakary.
An advertisement by the ITTOG (Institute of Travel and Tourism of The Gambia) rekindled his passion for cooking. He applied, aced the entrance tests, and embraced the rigorous training that followed. Through dedication, hard work, and an unyielding commitment to excellence, Bakary honed his skills and emerged as a chef ready to take on the culinary world.
Bakary's journey has not been without its challenges. He emphasizes that becoming a chef is not easy—it demands relentless effort, continuous learning, and a commitment to innovation. The food industry is ever-evolving, and staying ahead requires constant research and adaptation. Chefs must cater to diverse dietary needs, from vegan to vegetarian, and manage food allergies with utmost care. Cleanliness and the freshness of ingredients are paramount, ensuring that every dish meets the highest standards.
Proud of his Gambian heritage, Bakary takes immense pride in leading the kitchens at Bakadaji. He heads a team of dedicated individuals who look to him for guidance. He believes in the untapped potential of Gambians in the culinary field and is passionate about nurturing this talent. According to Bakary, it is time for Gambians to reclaim their food industry. With local training schools producing skilled professionals, there is less need to rely on foreign chefs.
Bakadaji embodies innovation, and this is reflected in its menu. Guests are encouraged to try the signature dishes or the fresh catch of the day. For those who crave authentic Gambian flavours, the local cuisine is prepared with a unique twist while retaining its traditional essence.
With Bakary Manneh at the helm, Bakadaji Hotel is set to maintain its edge in the culinary world, offering an unforgettable dining experience that delights and inspires.
