Traditional Dish Recipe: Supa Kanja

A special dish loved by Gambians is supa kanja. Supa kanja is one of the main dishes of every home in The Gambia. It is prepared with okra as the main ingredient. Sometimes you can cook it with jute leaf or mix both. The recipe we prepared for you contains only okra, but feel free to improvise and find your best combination of ingredients.

COOKING INGREDIENTS:

  • 1 kg of okra
  • 5 cups of palm oil
  • 4 smoked fish
  • 2 peppers
  • salt to taste
  • Maggie cube to taste (or a mix of African spices)
  •  Lubi (optional)
  • 2 bitter tomatoes
  •  beef
  •  2 ties of spring onions
  •  1 tsp Orgiri
  •  cow belly (optional)
  •  catfish (smoked or fresh)

COOKING DIRECTIONS:

  • Wash and cut meat into pieces of your choice, put it in a cooking pot and add water to cook. Allow it to cook half and half.
  • Wash the okra and cut it into pieces.
  • Add okra to the meat when most of the water evaporates.
  •  You can pound it if you want before adding it to the pot.
  • Wash and clean smoked catfish, remove middle bones and add to the pot.
  • Cut the spring onions into pieces and pound them with one big pepper.
  •  Wash Locust bean and pound, then keep in a small bowl.
  • Cut bitter tomato into two pieces and add to the pot.
  • Add locust beans and pepper when okra and meat are cooked.
  • Add the Lubi to make it more slippery.
  • Add little salt and Maggie to your taste.
  • Shred smoked Bonga fish and remove bones, then add to the pot when only a small amount of water remains in the pot.
  • Add palm oil and allow to boil until all the water evaporates.
  • Use moderate heat at this time to avoid burning and stir from time to time.
  • Serve with rice or fufu.

NOTE: Some may add shrimps or crab, but this depends on your preference. Some use fresh tilapia fish, which is steamed and shredded. Some don’t like to choose Bonga fish since it has too many bones and it has to be cleaned very precisely.
