Traditional Dish Recipe: Palm Kernel Soup

The dish, which is not the most common, takes quite some ingredients and time to prepare. And as with most dishes with a long preparation process, the taste is more than rewarding.

INGREDIENTS 

  • carrot
  • garden egg
  • onion
  • potatoes
  • spring onion
  • green pepper
  • hot pepper
  • tomatoes
  • bitter tomatoes
  • tomato paste
  • cassava
  • salted dried fish
  • cabbage
  • smoked fish
  • seasoning cube
  • smoked catfish
  • palm kernel seeds
  • garlic
  • black pepper
  • palm oil

PREPARATION PROCESS

Start by rinsing the palm kernel seeds thoroughly and, after rinsing, boil them. Whilst waiting for the palm kernel seeds to cook, start peeling the vegetables. After peeling the vegetables, pound the mixture of spices (green pepper, hot pepper, garlic, black pepper and sliced onions), which is called nokoss.

When the palm kernel seeds are well cooked, pound them. After beating the palm kernel seeds, pour hot water over them, mix it a bit and sieve it. After thoroughly sieving the palm kernel seeds, put the liquid to boil again.

Start working with the smoked fish by removing the scales, tiny bones, and unwanted particles. After the smoked fish is prepared, wash the catfish. Next, add roughly sliced vegetables, tomato paste, nokoss, palm oil, and cleaned fish to the boiling mixture of palm kernels—cook for a while. After everything is cooked well, serve it as a sauce with a bowl of boiled rice.
