Traditional Dish Recipe: Yassa

Chicken Yassa is one of the most common and simple-to-make dishes in The Gambia. Its main ingredients are rice, chicken, and onion; it is low-cost yet delicious. Like any other dish, chicken yassa can be cooked in various ways. Here is how we prepared it for you this month.

COOKING INGREDIENTS:

  • Chicken  
  • Cooking Oil
  • Onion
  • Mustard
  • Vinegar 
  • Garlic
  • Carrot
  • Hot pepper(optional)
  • Green pepper
  • Black pepper
  • Spring onion
  • Ginger (depending on the taste) 
  • Jumbo

COOKING DIRECTIONS:

First, remove the chicken's skin, cut it into pieces, and wash it with salt and lemon. Next, marinate it with mustard, vinegar, black pepper, jumbo and ginger. 

Put the chicken into the cooking pot and steam it for a while.

In the meantime, start pounding garlic, hot pepper, green pepper and spring onion. Cut the onion and carrot into small pieces and add the pounded mixture. Season it by adding mustard, vinegar, black pepper and Jumbo. 

Bring water to a boil to cook the rice. 

Fry the chicken. 

When it's golden brown, put it aside and stir-fry the seasoned vegetables until they are well fried. Add salt to the taste. 

When rice is cooked, and the sauce is well fried, the meal is ready to be served. Place rice on the plate and top it with the chicken and the sauce.  

Note: You can prepare yassa with different types of meat, e.g. with fish.
