When you travel to The Gambia, one of the street foods that you must try is the delicious groundnut cake. This traditional delicacy is commonly prepared by the Fula people and is simple and fast to prepare. Technically, it is not a traditional cake but rather resembles a granola bar.

There are two methods of preparing groundnut cake. The first method involves boiling the groundnuts, while the second method does not require boiling. 

Before we dive into the recipe, let's take a look at the ingredients needed for making this tasty snack. You will need groundnuts (also known as peanuts), milk, sugar, and ginger (optional).

To begin the cooking process, start by cleaning the groundnuts with clean water. Then, put a cooking pot on the fire and add the clean groundnuts. Next, add sugar, milk, and a small amount of water to the pot and stir well to prevent sticking.

Keep stirring the mixture until the water drains out and the groundnuts turn white. Once the mixture has thickened and the groundnuts are cooked, it's ready to be served. Simply dish it out on a wide plate and enjoy the delicious taste of Gambian groundnut cake.
