Traditional Dish Recipe: Chakry

Chakry is one of the traditional desserts prepared in The Gambia. The conventional way of preparing chakry includes making everything from scratch, which means one has to make sour milk from raw milk and couscous from millet flour, which is a very demanding process. Many cooks nowadays decide to make the process faster by buying ready-made ingredients.

INGREDIENTS 

  • Sour milk 
  • Couscous
  • Sugar
  • Condensed or evaporated milk (preferred Peak Milk)
  • Coconut powder
  • Apple
  • Raisins
  • Vanilla Sugar 
  • Vanilla essence
  • Coconut fruit

 

PREPARATION PROCESS

Add hot water to your couscous and cover it for fifteen minutes. While waiting for the couscous to be cooked, you can start cutting an apple into small pieces and grate a coconut. 

Now it's time for mixing. Add sugar and condensed milk to sour milk and mix it. Add vanilla sugar, apple, coconut powder, vanilla essence, raisins, and the graded coconut and stir until everything is well mixed.

The last thing to add to the mixture is couscous. 

The dessert can be cooled down before serving.
