Drink of the month: Baobab juice

The baobab fruit from the majestic baobab tree has pale brown fibre seeds, which can be used to produce non-alcoholic juice, which is very popular in the Gambia. The juice is rich in vitamin C, fibre and iron.

This locally or homemade juice can be found in many hotels and restaurants in The Gambia. It helps in weight loss and balancing blood sugar.

It is normally prepared by putting the floppy brown fibre into the water, allowing it to soak well before it is squeezed to remove the edible part from the seeds. The liquid then needs to be strained, and the whole process is repeated until only dark brown seeds remain in the sieve.

To add flavour to the juice, ingredients such as sugar, essence (banana, coconut, or other), vanilla sugar, and condensed milk are used. The juice is best when served fresh and cold.

There are different ways of preparing the juice, where ingredients play a significant role, especially selection of the flavour essence, amount of sugar and milk and preference of adding fresh fruit such as banana, apple or coconut.
